How are ya? I hope that you\u2019re enjoying the week so far! I have a podcast interview today, Pilates, and we\u2019ll probably hit the pool. We\u2019re trying to live up the last bit of summer before we\u2019re back in school craziness.<\/p>\n<p>For today\u2019s post, I wanted to share some of my favorite easy dinner ideas when I\u2019m solo parenting. Since the Pilot is back with the airlines, he\u2019s back to traveling more regularly while I hold it down with the crew here. When he\u2019s gone, meals are wayyyyy more casual. They\u2019re things I can make in less than 20 minutes that I know we all love. Usually I\u2019ll make something that includes leftovers so we can enjoy them the following day for lunch.<\/p>\n<p>For our family, meals will include some type of protein, some type of starch, a fruit and\/or vegetable. It makes it pretty plug and play, and when the kids have rounded meals like this, they\u2019re happier (no blood sugar crash) and maybe a little less snacky? (Though let\u2019s be real, summer is an all-day snack avalanche.)<\/p>\n<p>Here are some of the things I have in the rotation when it\u2019s just me and I want to cook something tasty, healthy, and quick.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"https:\/\/fitnessista.com\/?attachment_id=206999\" rel=\"attachment wp-att-206999 follow noopener noreferrer\" data-wpel-link=\"internal\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-206999\" src=\"https:\/\/bestratefinders.com\/blog\/wp-content\/uploads\/2025\/07\/Easy-solo-parenting-dinner-ideas.jpg\" data-fslightbox=\"gallery1\"><\/a><\/p>\n<h2>Easy solo parenting dinner ideas<\/h2>\n<h4><strong>&#8211; Breakfast for dinner.<\/strong><\/h4>\n<p>We do this at least once a week, whether the Pilot is here or not, because it\u2019s a crowd pleaser and you can customize it based on what you have. I might make Hello Kitty gluten-free waffles, pancakes (they still love these banana pancakes after all these years), French toast, and serve it up with breakfast sausage, bacon, or eggs as the protein, and some fruit.<\/p>\n<p><a href=\"https:\/\/fitnessista.com\/?attachment_id=206998\" rel=\"attachment wp-att-206998 follow noopener noreferrer\" data-wpel-link=\"internal\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-206998\" src=\"https:\/\/bestratefinders.com\/blog\/wp-content\/uploads\/2025\/07\/waffles-768x1024-1.jpg\" data-fslightbox=\"gallery1\"><\/a><\/p>\n<h4>&#8211; Tacos, rice and beans.<\/h4>\n<p>I put the chicken in the Instant Pot with oregano, salt, pepper, garlic powder, and some chicken broth, and cook for 12 minutes on manual. I shred it with the mixer, and serve with tortillas, beans, Mexican rice, and guac. I\u2019ll cut up whatever fresh fruit we have on hand and serve it on the side.<\/p>\n<p><a href=\"https:\/\/fitnessista.com\/?attachment_id=206997\" rel=\"attachment wp-att-206997 follow noopener noreferrer\" data-wpel-link=\"internal\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-206997\" src=\"https:\/\/bestratefinders.com\/blog\/wp-content\/uploads\/2025\/07\/taco-bowl-768x1024-1.jpg\" data-fslightbox=\"gallery1\"><\/a><\/p>\n<h4>&#8211; Spanish tortilla.<\/h4>\n<p><a href=\"https:\/\/spanishsabores.com\/best-spanish-omelet-recipe\/\" data-wpel-link=\"external\">This is one of our all-time favorites.<\/a> I\u2019ll cook the tortilla and often just serve it with sliced veggies and guac, and a side of fruit.<\/p>\n<p><a href=\"https:\/\/fitnessista.com\/5-2-friday-faves\/spanish-tortilla\/\" rel=\"attachment wp-att-189866 follow noopener noreferrer\" data-wpel-link=\"internal\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-189866\" src=\"https:\/\/bestratefinders.com\/blog\/wp-content\/uploads\/2025\/05\/spanish-tortilla-768x1024-1.jpg\" data-fslightbox=\"gallery1\"><\/a><\/p>\n<h4>&#8211; Greek salad bowls.<\/h4>\n<p>This is another family fave: chopped salad (you can use a kit to make life easier, or just chop romaine, tomatoes, red onion, cucumber, and add kalamata olives and feta), cooked chicken (rotisserie or leftover chicken), hummus (storebought or homemade), and stuffed grape leaves (I buy the ones in a can from Trader Joe\u2019s). Serve pita on the side.<\/p>\n<p><a href=\"https:\/\/fitnessista.com\/weekend-things\/greek-bowls\/\" rel=\"attachment wp-att-159262 follow noopener noreferrer\" data-wpel-link=\"internal\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-159262\" src=\"https:\/\/bestratefinders.com\/blog\/wp-content\/uploads\/2025\/06\/greek-bowls-768x1024-1.jpg\" data-fslightbox=\"gallery1\"><\/a><\/p>\n<h4>&#8211; Gluten-free chicken nuggets<\/h4>\n<p>I order the ones from <a href=\"https:\/\/butcherbox.pxf.io\/c\/4464192\/2147459\/16419\" data-wpel-link=\"external\">ButcherBox<\/a> and serve with salad, and fruit. Easy peasy.<\/p>\n<h4>&#8211; Ramen with shredded chicken or shrimp.<\/h4>\n<p>I\u2019ll buy ramen from Whole Foods (they have a few gluten-free options) and add shredded chicken or sauteed shrimp, and cut up fruit on the side.<\/p>\n<h4>&#8211; Stiry fry noodle bowl.<\/h4>\n<p>I\u2019ll stir fry a ton of veggies (bell pepper, onion, broccoli, carrot, whatever we have on hand), and add in cooked noodles and a peanut sauce with peanut butter, Tamari, rice wine vinegar, sesame oil, garlic, ginger, sriracha and honey. I make the sauce while the veggies and noodles cook, and everything is done so quickly. I usually top with sesame seeds and cilantro.<\/p>\n<h4>&#8211; Salmon sushi roll bowl.<\/h4>\n<p>We have this one often, too. It\u2019s just cooked rice (cooked in the Instant Pot with equal parts broth\/water and rice), salmon (cooked in the air fryer), cucumber, edamame, avocado, and seaweed.<\/p>\n<p><a href=\"https:\/\/fitnessista.com\/5-quick-and-healthy-breakfast-lunch-and-dinner-ideas-macro-counts\/sushi-roll-bowl-jpg-3\/\" rel=\"attachment wp-att-108485 follow noopener noreferrer\" data-wpel-link=\"internal\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-108485\" src=\"https:\/\/bestratefinders.com\/blog\/wp-content\/uploads\/2023\/08\/sushi-roll-bowl.jpg\" data-fslightbox=\"gallery1\"><\/a><\/p>\n<h4>&#8211; Egg roll in a bowl.<\/h4>\n<p>Just saute some ground meat with a cabbage\/slaw mix, garlic, ginger, and season with Tamari, sriracha, and sesame oil. Top with everything but the bagel seasoning. I\u2019ll serve with fresh fruit &#8211; just whatever we have on hand.<\/p>\n<h4>&#8211; Homemade pizza.<\/h4>\n<p>Dough, sauce, pepperoni, cheese, and served with a salad or roasted veggies.<\/p>\n<h4>&#8211; Sheet pan meals!<\/h4>\n<p>We especially like the organic chicken sausage from Costco, bell peppers, and broccoli<\/p>\n<h4>&#8211; Kevin\u2019s sauce meal.<\/h4>\n<p>This is another fan fave. Kevin\u2019s makes AMAZING sauces &#8211; I buy them from <a href=\"http:\/\/thrv.me\/gbDAwX\" data-wpel-link=\"external\">Thrive Market<\/a> &#8211; and I\u2019ll just cook up a ton of veggies, add some chicken, steak, salmon or shrimp, and add the Kevin\u2019s sauce before serving on top of rice. We love the teriyaki, Korean bbq, and coconut curry.<\/p>\n<h4>&#8211; Turkey meatballs with pasta, sauce, and a veggie.<\/h4>\n<p><a href=\"https:\/\/fitnessista.com\/meal-prep-turkey-meatballs-gluten-free\/\" data-wpel-link=\"internal\" rel=\"follow noopener noreferrer\">I usually make the turkey meatballs<\/a> in advance and freeze them for an easy\/quick meal.
