Whole-wheat naan makes a great base for miniature pizzas. Jarred tikka masala sauce makes a delicious substitute for pizza sauce and rotisserie chicken breast adds protein in this super-simple recipe that’s ready in just 15 minutes.
Active time: 5 minutes | Total time: 15 minutes
Chicken Tandoori Naan-zzas
Ingredients
- 4 whole-wheat naan (8-inch, about 100g each)
- 1/2 cup (125g) tikka masala Indian simmer sauce
- 1 rotisserie chicken breast (120g), skin discarded, chopped
- 1 medium tomato, chopped
- 1/2 cup (56g) part-skim mozzarella, shredded
- 1/4 cup (62g) plain non-fat Greek yogurt
- 1/4 cup (33g) cucumber, chopped
- 1/8 tsp salt
- 1/8 tsp cayenne pepper
- 2 tbsp fresh cilantro, chopped
Directions
Preheat the oven to 425°F (218°C). Place the naan on a baking sheet and spread each with 2 tbsp of simmer sauce. Next, divide chicken and tomatoes evenly and sprinkle with the cheese. Bake naan-zzas until crisp on the edges and the cheese is bubbly, about 10 minutes.
While the naan-zzas are baking, combine the yogurt, cucumber, salt and cayenne pepper in a small bowl.
Drizzle 2 tbsp of cucumber-yogurt sauce over each naan-zza. Sprinkle cilantro evenly and cut each naan into 4 pieces and serve.
